Oleic acid is a monounsaturated omega-9 fatty acid with the chemical formula C₁₈H₃₄O₂. It appears as a pale yellow or brownish yellow oily liquid with a lard-like odor. Oleic acid is insoluble in water but soluble in alcohol, benzene, chloroform, and diethyl ether. It has a melting point of 13-14°C and a boiling point of 360°C at 760 mm Hg.
